Ingredients

  • 1 cup almond flour
  • 1/2 cup pumpkin puree
  • 1/4 cup maple syrup
  • 2 tablespoons melted coconut oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup chopped almonds (optional)

Directions

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, mix together almond flour, pumpkin puree, maple syrup, melted coconut oil, spices, baking powder, and salt.
  3. Stir in chopped almonds if desired.
  4. Spoon batter into lightly greased mini muffin tins, filling each cup about 2/3 full.
  5. Bake for 18-20 minutes or until muffins are golden brown and a toothpick inserted into the center comes out clean.
  6. Let cool before serving.
