Ingredients
- 1 cup almond flour
- 1/2 cup pumpkin puree
- 1/4 cup maple syrup
- 2 tablespoons melted coconut oil
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup chopped almonds (optional)
Directions
- Preheat oven to 350°F (175°C).
- In a medium bowl, mix together almond flour, pumpkin puree, maple syrup, melted coconut oil, spices, baking powder, and salt.
- Stir in chopped almonds if desired.
- Spoon batter into lightly greased mini muffin tins, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until muffins are golden brown and a toothpick inserted into the center comes out clean.
- Let cool before serving.
