Ingredients

  • 1 cup freekeh
  • 1/2 cup rolled oats
  • 1/4 cup almond flour
  • 1/4 cup chia seeds
  • 1/4 cup ground flaxseed
  • 1/4 cup nut butter of choice
  • 2 tablespoons honey
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt
  • 1/2 cup dark chocolate chips, plus more for topping

Directions

  1. In a food processor, process the freekeh until it's broken up and resembles a coarse meal.
  2. Add the rolled oats, almond flour, chia seeds, ground flaxseed, nut butter, honey, cinnamon, and sea salt, and process until everything is combined and a dough forms.
  3. Stir in the chocolate chips.
  4. Roll the dough into 1-inch balls and place on a parchment-lined baking sheet.
  5. Top each ball with additional chocolate chips, if desired.
  6. Refrigerate for at least 1 hour, until firm.
