1 (14-ounce) package chourico sausage, cut into 1/2-inch slices
1 (15-ounce) can white beans, drained and rinsed
1 cup long-grain white rice
2 cups chicken broth
1/4 cup chopped fresh parsley
Salt and freshly ground black pepper, to taste
Directions
Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook, stirring occasionally, until softened, about 3-4 minutes.
Add the paprika, oregano, red pepper flakes and chourico and cook, stirring occasionally, for 2 minutes.
Stir in the beans, rice, chicken broth and 1/4 cup parsley.
Bring to a boil; reduce heat and simmer, covered, until the rice is tender and most of the liquid has been absorbed, about 20 minutes.
Season with salt and pepper, to taste. Serve warm.
