Ingredients
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 garlic clove, minced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- 1 (14-ounce) package chourico sausage, cut into 1/2-inch slices
- 1 (15-ounce) can white beans, drained and rinsed
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1/4 cup chopped fresh parsley
- Salt and freshly ground black pepper, to taste
Directions
- Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook, stirring occasionally, until softened, about 3-4 minutes.
- Add the paprika, oregano, red pepper flakes and chourico and cook, stirring occasionally, for 2 minutes.
- Stir in the beans, rice, chicken broth and 1/4 cup parsley.
- Bring to a boil; reduce heat and simmer, covered, until the rice is tender and most of the liquid has been absorbed, about 20 minutes.
- Season with salt and pepper, to taste. Serve warm.
