Directions
Heat the olive oil in a large pot over medium-high heat. Add the onion, garlic, bell peppers, and mushrooms and cook until vegetables are softened, about 5 minutes.
Add the chili powder, cumin, oregano, and cayenne pepper and stir to combine.
Add the diced tomatoes, black beans, bulgur wheat, and vegetable broth and stir to combine. Bring to a boil, then reduce heat to low, cover, and simmer until bulgur is cooked through, about 10 minutes.
Season with salt and pepper, to taste. Serve with desired toppings.
