Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 2 cups long grain white rice
  • 3 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. Heat the oil in a large saucepan over medium heat. Add the onions and bell peppers and cook until softened, about 5 minutes.
  2. Add the garlic and cook for 1 minute.
  3. Add the rice and stir to coat with the oil. Cook for 2 minutes.
  4. Add the chicken broth, cumin, oregano, paprika, salt and pepper. Bring to a boil, reduce heat to low, cover and simmer for 15 minutes.
  5. Remove the pan from the heat and let it sit, covered, for 5 minutes. Fluff with a fork and serve.
