Ingredients
2 tablespoons olive oil
1 small onion, diced
1 red bell pepper, diced
2 cloves garlic, minced
2 cups long grain white rice
3 cups chicken broth
1 teaspoon cumin
1 teaspoon oregano
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Directions
Heat the oil in a large saucepan over medium heat. Add the onions and bell peppers and cook until softened, about 5 minutes.
Add the garlic and cook for 1 minute.
Add the rice and stir to coat with the oil. Cook for 2 minutes.
Add the chicken broth, cumin, oregano, paprika, salt and pepper. Bring to a boil, reduce heat to low, cover and simmer for 15 minutes.
Remove the pan from the heat and let it sit, covered, for 5 minutes. Fluff with a fork and serve.
