Ingredients
- 2 large sweet potatoes, diced
- 3 bell peppers, diced
- 1 large red onion, diced
- 4 cloves of garlic, minced
- 2 tablespoons of olive oil
- 3 tablespoons of balsamic vinegar
- 1 tablespoon of dried oregano
- Salt and pepper, to taste
- 2 cups of baby spinach
- 1/2 cup of feta cheese, crumbled
Directions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine the diced sweet potatoes, bell peppers, red onion, garlic, olive oil, balsamic vinegar, oregano, salt, and pepper. Toss until everything is evenly coated.
- Transfer the mixture to a large baking sheet and spread evenly. Roast in the preheated oven for 25-30 minutes, stirring occasionally, until vegetables are tender and lightly browned.
- Remove from oven and let cool for a few minutes.
- In a large bowl, combine the roasted vegetables with the spinach and feta cheese. Mix until everything is evenly distributed.
