This stew is a flavorful and satisfying dish that combines lean turkey meatballs with a variety of vegetables and a spicy broth. It's perfect for a chilly night or as a comforting meal any time of year.

Ingredients

  • 1 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped bell pepper
  • 1 jalapeno, seeded and diced
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, parsley, egg, salt, and pepper. Mix well and form into meatballs.
  2. Heat olive oil in a large pot over medium heat. Add meatballs and brown on all sides, then remove from pot and set aside.
  3. In the same pot, add onion, garlic, carrots, celery, bell pepper, and jalapeno. Cook until vegetables are softened.
  4. Stir in diced tomatoes, chicken broth, cumin, chili powder, salt, and pepper. Bring to a simmer.
  5. Add meatballs back to the pot and let simmer for 20-25 minutes until meatballs are cooked through and flavors have melded.
  6. Taste and adjust seasonings as needed. Serve hot and enjoy!
