This Eggplant Panini recipe is a flavorful twist on the classic sandwich. Grilled eggplant slices are layered with melted cheese, fresh basil, and ripe tomatoes, all sandwiched between crispy ciabatta bread. This vegetarian panini is perfect for a quick and satisfying lunch or dinner option.

Ingredients

  • 1 medium eggplant, sliced
  • 4 slices of ciabatta bread
  • 8 slices of fresh mozzarella cheese
  • 1 large tomato, sliced
  • A handful of fresh basil leaves
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Directions

  1. Preheat a panini press or grill pan over medium heat.
  2. Brush both sides of the eggplant slices with olive oil and season with salt and pepper.
