Ingredients
2 lbs. beef chuck, cubed
1 tablespoon olive oil
1 large onion, diced
3 cloves garlic, minced
2 tablespoons tomato paste
1/3 cup bourbon
1 cup beef broth
2 teaspoons Worcestershire sauce
1 teaspoon dried thyme
2 bay leaves
1 lb. carrots, peeled and cut into 1-inch pieces

Directions
Set the Instant Pot to the “saute” setting. Add the olive oil and heat until shimmering.
Add the beef cubes and cook until browned, about 5 minutes.
Add the onion and garlic and cook until softened, about 5 minutes.
Add the tomato paste, bourbon, beef broth, Worcestershire sauce, thyme, and bay leaves. Stir to combine.
Add the carrots and potatoes. Stir to combine.
Close and seal the Instant Pot. Set to “Manual” mode and cook for 25 minutes.
Release the pressure and open the Instant Pot. Stir in the flour, salt, and pepper.
Set the Instant Pot to the “saute” setting and cook until the sauce has thickened, about 5 minutes.
