Ingredients

  • 3 bell peppers, any color
  • 2 tablespoons olive oil
  • 1 cup cooked breakfast sausage
  • 1/2 cup diced onion
  • 4 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste

Directions

  1. Preheat oven to 350 degrees.
  2. Cut bell peppers in half and remove seeds. Place on a baking sheet and drizzle with olive oil.
  3. In a large bowl, combine breakfast sausage, onion, eggs, milk, cheese, salt, and pepper. Mix until fully combined.
  4. Stuff each bell pepper half with the egg mixture and place on the baking sheet.
  5. Bake for 25 minutes or until golden brown and the eggs are cooked through.
  6. Serve warm with toast.
