1 lb. of white fish fillets (cod, haddock, or other)
1/2 cup of fresh lemon juice
1/4 cup of olive oil
1/4 teaspoon of sea salt
1/4 teaspoon of freshly ground black pepper
1 large red onion, chopped
2 cloves of garlic, minced
1 bell pepper, chopped
1 zucchini, chopped
1 cup of cherry tomatoes, halved
1/4 cup of fresh parsley, chopped
Directions
Preheat the oven to 375 degrees Fahrenheit.
In a shallow baking dish, combine the fish, lemon juice, olive oil, salt and pepper. Toss to coat and set aside.
In a separate bowl, combine the onion, garlic, bell pepper, zucchini, tomatoes, and parsley. Add the vegetable mixture to the baking dish and stir gently to combine.
Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and the vegetables are tender.
Serve hot with a side of your favorite cooked grain.
