Ingredients
- 1 lb. of white fish fillets (cod, haddock, or other)
- 1/2 cup of fresh lemon juice
- 1/4 cup of olive oil
- 1/4 teaspoon of sea salt
- 1/4 teaspoon of freshly ground black pepper
- 1 large red onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, chopped
- 1 zucchini, chopped
- 1 cup of cherry tomatoes, halved
- 1/4 cup of fresh parsley, chopped
Directions
- Preheat the oven to 375 degrees Fahrenheit.
- In a shallow baking dish, combine the fish, lemon juice, olive oil, salt and pepper. Toss to coat and set aside.
- In a separate bowl, combine the onion, garlic, bell pepper, zucchini, tomatoes, and parsley. Add the vegetable mixture to the baking dish and stir gently to combine.
- Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and the vegetables are tender.
- Serve hot with a side of your favorite cooked grain.
