Ingredients
- 3/4 cup butter, softened
- 1 1/2 cups all-purpose flour
- 2/3 cup confectioners' sugar
- 2 tablespoons grated lemon zest
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 2 tablespoons fresh lemon juice
- 1 teaspoon vanilla extract
- 1/2 cup granulated sugar
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease baking sheets.
- In a medium bowl, cream together the butter and confectioners' sugar until light and fluffy. Beat in the lemon zest and vanilla extract.
- In a separate bowl, sift together the flour, salt, baking powder, and baking soda. Gradually beat into the butter mixture. Stir in the lemon juice.
- Shape dough into 1 inch balls, and roll in granulated sugar. Place cookies 2 inches apart onto the prepared baking sheets.
- Bake for 10 to 12 minutes in the preheated oven, until lightly browned. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
