Ingredients

  • 2 pounds of cod fillets
  • 1 red bell pepper, roasted, peeled and diced
  • 3 tablespoons of horseradish sauce
  • 2 tablespoons of olive oil
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • 1/4 cup of parsley, chopped

Directions

  1. Preheat oven to 375 degrees F.
  2. Season the cod fillets with salt and pepper.
  3. In a small bowl, mix the horseradish sauce, olive oil, and minced garlic.
  4. Place the cod fillets in a baking dish. Top with the roasted red pepper and horseradish sauce mixture.
  5. Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through.
  6. Sprinkle with chopped parsley, and serve warm.
