Ingredients
- 2 pounds of cod fillets
- 1 red bell pepper, roasted, peeled and diced
- 3 tablespoons of horseradish sauce
- 2 tablespoons of olive oil
- 1 garlic clove, minced
- Salt and pepper to taste
- 1/4 cup of parsley, chopped
Directions
- Preheat oven to 375 degrees F.
- Season the cod fillets with salt and pepper.
- In a small bowl, mix the horseradish sauce, olive oil, and minced garlic.
- Place the cod fillets in a baking dish. Top with the roasted red pepper and horseradish sauce mixture.
- Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through.
- Sprinkle with chopped parsley, and serve warm.
