Ingredients

  • 1/2 cup butter, melted
  • 3/4 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 cup flaked coconut
  • 1/2 cup chopped dried apricots

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  2. In a medium bowl, cream together the melted butter and sugar. Beat in the egg and vanilla. Combine the flour, baking powder, and salt; stir into the creamed mixture. Mix in the coconut and apricots. Spread evenly in the prepared pan.
  3. Bake for 25 minutes in the preheated oven, or until golden and a toothpick inserted into the center comes out clean.
  4. Cool before cutting into squares.
