Ingredients
- 1/2 cup butter, melted
- 3/4 cup white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/4 teaspoon baking powder
- 1/8 teaspoon salt
- 1 cup flaked coconut
- 1/2 cup chopped dried apricots
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- In a medium bowl, cream together the melted butter and sugar. Beat in the egg and vanilla. Combine the flour, baking powder, and salt; stir into the creamed mixture. Mix in the coconut and apricots. Spread evenly in the prepared pan.
- Bake for 25 minutes in the preheated oven, or until golden and a toothpick inserted into the center comes out clean.
- Cool before cutting into squares.
