Ingredients
- 2/3 cup cocoa powder
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup vegetable oil
- 2 cups granulated sugar
- 4 large eggs
- 2 teaspoons pure vanilla extract
- 2/3 cup powdered sugar
Directions
- Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together the cocoa powder, flour, baking powder, and salt. Set aside.
- In a large bowl, mix together the oil, sugar, eggs, and vanilla extract.
- Stir the dry ingredients into the wet ingredients until combined.
- Cover the bowl and chill in the refrigerator for an hour.
- Put the powdered sugar in a shallow bowl or plate.
- Roll the cookie dough into 1-inch balls, then roll the balls in the powdered sugar to coat. Place the balls onto the prepared baking sheets.
- Bake for 10-12 minutes, or until the cookies are set. Allow the cookies to cool for 5 minutes before transferring to a cooling rack.
