Ingredients

  • 2/3 cup cocoa powder
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup vegetable oil
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons pure vanilla extract
  • 2/3 cup powdered sugar

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the cocoa powder, flour, baking powder, and salt. Set aside.
  3. In a large bowl, mix together the oil, sugar, eggs, and vanilla extract.
  4. Stir the dry ingredients into the wet ingredients until combined.
  5. Cover the bowl and chill in the refrigerator for an hour.
  6. Put the powdered sugar in a shallow bowl or plate.
  7. Roll the cookie dough into 1-inch balls, then roll the balls in the powdered sugar to coat. Place the balls onto the prepared baking sheets.
  8. Bake for 10-12 minutes, or until the cookies are set. Allow the cookies to cool for 5 minutes before transferring to a cooling rack.
