Ingredients
- 4 slices of bacon
- 1 medium onion, diced
- 1 green bell pepper, diced
- 2 cloves of garlic, minced
- 2 cups of hominy, drained and rinsed
- 4 large eggs
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Directions
- In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon and drain on a paper towel. Crumble the bacon into small pieces and set aside.
- In the same skillet, reserve about 2 tablespoons of bacon drippings. Add the diced onion and bell pepper, and cook until they begin to soften, about 5 minutes.
- Add the minced garlic to the skillet and cook for an additional minute, until fragrant.
- Stir in the drained and rinsed hominy, and cook for 5-7 minutes, until heated through.
- Create 4 small wells in the hominy mixture with the back of a spoon. Crack an egg into each well. Season the eggs with salt and pepper.
- Cover the skillet and cook the eggs until they reach your desired level of doneness. For a runny yolk, cook for about 3-4 minutes. For a firmer yolk, cook for 5-6 minutes.
- Once the eggs are cooked, sprinkle the crumbled bacon on top.
- Garnish with fresh cilantro.
