Ingredients

  • 1 cup pearl barley
  • 2 cans white beans, drained and rinsed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • 4 cups fresh spinach

Directions

  1. In a large pot, heat some oil over medium heat and sauté the onion until translucent.
