Ingredients
- 2 cups all-purpose flour
- 1/2 cup white sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 1/2 cup vegetable oil
- 1/2 cup plain yogurt
- 1 teaspoon vanilla extract
- 2 kiwis, peeled and diced
Directions
- Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper liners.
- In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together the eggs, oil, yogurt, and vanilla.
- Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the diced kiwis.
- Fill the muffin cups about two-thirds full. Bake for 18 to 20 minutes in the preheated oven, or until a toothpick inserted into the center of a muffin comes out clean.
