Ingredients
1 small pumpkin
1 onion, chopped
1 clove garlic, minced
1 cup mushrooms, sliced
1 cup cooked quinoa
1/2 cup pecans, chopped
1 tablespoon olive oil
1 teaspoon dried thyme
Salt and pepper to taste
Directions
Preheat oven to 350 degrees F.
Cut the top off the pumpkin and remove the seeds.
In a large skillet, heat the olive oil over medium heat. Add the onion, garlic, mushrooms, and thyme. Cook for 5 minutes, stirring occasionally.
Stir in the quinoa, pecans, salt, and pepper. Cook for another 5 minutes.
Stuff the pumpkin with the quinoa mixture. Place the top of the pumpkin back on and place in the oven for 20 minutes or until the pumpkin is tender.
Remove from the oven and serve.
