Ingredients
- 1 small pumpkin
- 1 onion, chopped
- 1 clove garlic, minced
- 1 cup mushrooms, sliced
- 1 cup cooked quinoa
- 1/2 cup pecans, chopped
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
Directions
- Preheat oven to 350 degrees F.
- Cut the top off the pumpkin and remove the seeds.
- In a large skillet, heat the olive oil over medium heat. Add the onion, garlic, mushrooms, and thyme. Cook for 5 minutes, stirring occasionally.
- Stir in the quinoa, pecans, salt, and pepper. Cook for another 5 minutes.
- Stuff the pumpkin with the quinoa mixture. Place the top of the pumpkin back on and place in the oven for 20 minutes or until the pumpkin is tender.
- Remove from the oven and serve.
