Ingredients

  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon kosher salt
  • 1 cup white sugar
  • ½ cup unsalted butter, melted
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh rhubarb, chopped
  • ¾ cup milk
  • ¼ cup brown sugar
  • 1 teaspoon ground cinnamon

Directions

  1. Preheat oven to 350°F. Grease a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the white sugar and butter until light and fluffy. Beat in the egg and vanilla.
  4. Stir in the rhubarb, then gradually stir in the flour mixture until everything is just combined.
  5. Pour the batter into the prepared cake pan and spread evenly.
  6. In a small bowl, stir together the milk, brown sugar, and cinnamon. Pour this mixture over the cake batter.
  7. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
