In a medium saucepan, bring the chicken broth to a boil over high heat.
Add the rice and reduce the heat to low. Cover and simmer for 20 minutes, or until the rice is tender.
Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the onion, bell pepper, garlic, salt and oregano. Cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
Stir the cooked vegetables into the cooked rice.
Sprinkle the grated cheese over the top and cover the pan until the cheese melts, about 2 minutes.
Serve the green rice warm.
