Ingredients
- 1 lb. new potatoes
- 2 tablespoons olive oil
- 1/4 cup capers, drained
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Directions
- Preheat oven to 400°F.
- Wash and scrub potatoes, then cut into 1-inch cubes.
- In a large bowl, toss potatoes with olive oil.
- Spread potatoes on a baking sheet and bake for 20 minutes, or until golden and tender.
- Meanwhile, in a medium skillet, heat butter over medium heat. Add capers, garlic, and parsley and sauté for 2-3 minutes.
- Remove potatoes from oven and add to skillet with caper sauce. Toss to combine.
- Season with salt and pepper to taste.
- Serve warm.
