Ingredients
1 lb. new potatoes
2 tablespoons olive oil
1/4 cup capers, drained
2 cloves garlic, minced
2 tablespoons butter
1/4 cup fresh parsley, chopped
Salt and pepper to taste
Directions
Preheat oven to 400°F.
Wash and scrub potatoes, then cut into 1-inch cubes.
In a large bowl, toss potatoes with olive oil.
Spread potatoes on a baking sheet and bake for 20 minutes, or until golden and tender.
Meanwhile, in a medium skillet, heat butter over medium heat. Add capers, garlic, and parsley and sauté for 2-3 minutes.
Remove potatoes from oven and add to skillet with caper sauce. Toss to combine.
Season with salt and pepper to taste.
Serve warm.
