New Potatoes with Caper Sauce

Ingredients

  • 1 lb. new potatoes
  • 2 tablespoons olive oil
  • 1/4 cup capers, drained
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Directions

  1. Preheat oven to 400°F.
  2. Wash and scrub potatoes, then cut into 1-inch cubes.
  3. In a large bowl, toss potatoes with olive oil.
  4. Spread potatoes on a baking sheet and bake for 20 minutes, or until golden and tender.
  5. Meanwhile, in a medium skillet, heat butter over medium heat. Add capers, garlic, and parsley and sauté for 2-3 minutes.
  6. Remove potatoes from oven and add to skillet with caper sauce. Toss to combine.
  7. Season with salt and pepper to taste.
  8. Serve warm.
