Ingredients
- 2 tablespoons olive oil
- 2 pounds beef chuck stew meat, cut into 1-inch cubes
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup Guinness beer
- 2 cups low-sodium beef broth
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 2 bay leaves
- 1/4 cup chopped fresh parsley
Directions
- Heat the oil in a large Dutch oven over medium-high heat. Season the beef with the salt and pepper and add it to the pan. Cook, stirring occasionally, until the beef is browned, about 5 minutes.
- Add the onion, garlic, carrots, and celery and cook until the vegetables are softened, about 5 minutes.
- Add the beer and cook until it is reduced by half, about 5 minutes.
- Add the broth, tomato paste, Worcestershire sauce, thyme, and bay leaves. Stir to combine and bring the mixture to a simmer.
- Reduce the heat to low and cover the pot. Simmer, stirring occasionally, until the beef is tender, about 1 hour.
- Remove the bay leaves and stir in the parsley. Serve warm.
