2 pounds beef chuck stew meat, cut into 1-inch cubes
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 large onion, diced
3 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 cup Guinness beer
2 cups low-sodium beef broth
2 tablespoons tomato paste
2 tablespoons Worcestershire sauce
1 teaspoon dried thyme
2 bay leaves
1/4 cup chopped fresh parsley
Directions
Heat the oil in a large Dutch oven over medium-high heat. Season the beef with the salt and pepper and add it to the pan. Cook, stirring occasionally, until the beef is browned, about 5 minutes.
Add the onion, garlic, carrots, and celery and cook until the vegetables are softened, about 5 minutes.
Add the beer and cook until it is reduced by half, about 5 minutes.
Add the broth, tomato paste, Worcestershire sauce, thyme, and bay leaves. Stir to combine and bring the mixture to a simmer.
Reduce the heat to low and cover the pot. Simmer, stirring occasionally, until the beef is tender, about 1 hour.
Remove the bay leaves and stir in the parsley. Serve warm.
