- 1 jalapeno pepper, diced
- 1 poblano pepper, diced
- 1 serrano pepper, diced
- 1 red bell pepper, diced

- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1 28-ounce can crushed tomatoes
- 2 15-ounce cans kidney beans, drained and rinsed
- 1 cup vegetable broth or water
- Salt and pepper to taste
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook for about 5 minutes, stirring occasionally, until softened.
- Add the jalapeno, poblano, serrano, red bell, and green bell peppers and cook for about 5 minutes, stirring occasionally, until softened.
- Stir in the chili powder, cumin, smoked paprika, and cayenne pepper and cook for about 1 minute, stirring constantly.
- Add the crushed tomatoes, kidney beans, and vegetable broth or water and bring to a boil.
- Reduce the heat to low and simmer for 15 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Serve hot.
