Ingredients

  • 1 can (15 oz) of red beans, drained and rinsed
  • 1 bell pepper, diced
  • 1/2 cup of feta cheese, crumbled
  • 1/4 cup of kalamata olives, pitted and chopped
  • 1/4 cup of olive oil
  • 2 tablespoons of fresh lemon juice
  • 1/2 teaspoon of garlic powder
  • Salt and pepper, to taste

Directions

  1. In a large bowl, combine the red beans, bell pepper, feta cheese, and olives.
  2. In a small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper.
  3. Pour the dressing over the salad and mix until everything is evenly coated.
