Ingredients
- 1 cup gluten-free flour
- 3/4 cup milk (dairy or non-dairy)
- 1 egg
- 1 tablespoon sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup vegetable oil
Directions
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the milk, egg, and oil.
- Add the wet ingredients to the dry ingredients and whisk until combined. The batter should be thick but pourable.
- Heat a non-stick skillet over medium heat. Spray with cooking spray or add a little oil to the pan.
- Pour about 1/4 cup of batter into the skillet. Tilt and swirl the skillet until the batter evenly covers the bottom.
- Cook for about 1-2 minutes, until the edges are golden and the middle is set.
- Carefully flip the crepe or pancake and cook for another 1-2 minutes.
- Remove from the pan and repeat with the remaining batter.
