Ingredients
1 cup gluten-free flour
3/4 cup milk (dairy or non-dairy)
1 egg
1 tablespoon sugar
1/2 teaspoon baking powder

Directions
In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, whisk together the milk, egg, and oil.
Add the wet ingredients to the dry ingredients and whisk until combined. The batter should be thick but pourable.
Heat a non-stick skillet over medium heat. Spray with cooking spray or add a little oil to the pan.
Pour about 1/4 cup of batter into the skillet. Tilt and swirl the skillet until the batter evenly covers the bottom.
Cook for about 1-2 minutes, until the edges are golden and the middle is set.
Carefully flip the crepe or pancake and cook for another 1-2 minutes.
Remove from the pan and repeat with the remaining batter.
