Ingredients

  • 1 cup gluten-free flour
  • 3/4 cup milk (dairy or non-dairy)
  • 1 egg
  • 1 tablespoon sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup vegetable oil

Directions

  1. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the milk, egg, and oil.
  3. Add the wet ingredients to the dry ingredients and whisk until combined. The batter should be thick but pourable.
  4. Heat a non-stick skillet over medium heat. Spray with cooking spray or add a little oil to the pan.
  5. Pour about 1/4 cup of batter into the skillet. Tilt and swirl the skillet until the batter evenly covers the bottom.
  6. Cook for about 1-2 minutes, until the edges are golden and the middle is set.
  7. Carefully flip the crepe or pancake and cook for another 1-2 minutes.
  8. Remove from the pan and repeat with the remaining batter.
