Ingredients
1 cup old-fashioned oats
1 ripe banana, mashed
2 tablespoons honey or maple syrup
1/4 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/4 teaspoon salt
Directions
Preheat the oven to 350 degrees F.
In a medium bowl, mash the banana with a fork until creamy.
Add the oats, honey/maple syrup, cinnamon, baking soda, and salt to the mashed banana and mix until combined.
Line a baking sheet with parchment paper.
Scoop the cookie dough by tablespoons onto the lined baking sheet. Gently flatten the cookies with the back of the spoon.
Bake for 10-12 minutes or until the edges are golden. Allow to cool before eating.
