Ingredients

  • 4 cups of fresh or frozen rhubarb, diced
  • 2/3 cup white sugar
  • 2 tablespoons all-purpose flour
  • 2 tablespoons fresh ginger, grated
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/2 cup brown sugar
  • 1/4 teaspoon salt
  • 1/2 cup cold butter, cubed

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C). Grease an 8-inch square baking dish.
  2. In a large bowl, combine the rhubarb, white sugar, 2 tablespoons flour, ginger, cinnamon, nutmeg, and cloves. Pour into the prepared baking dish.
  3. In a separate bowl, combine the 1/2 cup flour, oats, brown sugar, and salt. Cut in the butter until the mixture is crumbly. Sprinkle over the rhubarb mixture.
  4. Bake in the preheated oven for 40 to 45 minutes, or until the top is golden brown and the filling is bubbly.
