Preheat the oven to 375°F. Grease a 6-cavity doughnut pan with vegetable oil.
In a large bowl, whisk together the oil, sugar, eggs and vanilla until combined.
In a separate bowl, sift together the flour, baking powder and salt. Gradually add the dry ingredients to the wet ingredients and mix until combined.
In a small bowl, mix together the apples, sugar and cinnamon. Set aside.
Spoon the batter into the prepared doughnut pan, filling each cavity about 2/3 full. Top each doughnut with the apple mixture. Bake for 15-18 minutes, or until golden brown.
Remove from the oven and let cool for 5 minutes. Carefully remove the doughnuts from the pan and place on a cooling rack. Serve warm or at room temperature.
