Ingredients

  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups peeled and chopped apples
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Directions

  1. Preheat the oven to 375°F. Grease a 6-cavity doughnut pan with vegetable oil.
  2. In a large bowl, whisk together the oil, sugar, eggs and vanilla until combined.
  3. In a separate bowl, sift together the flour, baking powder and salt. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  4. In a small bowl, mix together the apples, sugar and cinnamon. Set aside.
  5. Spoon the batter into the prepared doughnut pan, filling each cavity about 2/3 full. Top each doughnut with the apple mixture. Bake for 15-18 minutes, or until golden brown.
  6. Remove from the oven and let cool for 5 minutes. Carefully remove the doughnuts from the pan and place on a cooling rack. Serve warm or at room temperature.
