Ingredients
- 4 large potatoes
- 1/2 cup flour
- 1 teaspoon salt
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1/4 cup chopped parsley
- 1/4 cup grated Parmesan cheese
- Peel and grate the potatoes on the large holes of a box grater and transfer to a large bowl.
- Add the flour and salt and mix until the dough is just combined.
- Divide the dough into 8 pieces and form each piece into a log about 1/2 inch thick.
- Cut each log into 1/2 inch thick slices and transfer to a plate.
- Heat the butter and oil in a large skillet over medium heat.
- Add the potato slices to the skillet and cook until golden brown, about 5 minutes per side.
- Remove from heat and transfer to a plate. Sprinkle with parsley and Parmesan cheese and serve.
- Badische Schupfnudeln are a traditional German dish, first created in the Baden region of Germany.
- The name “schupfnudeln” comes from the German word “schupfen” which means “to push”, referring to how the noodles are formed by pushing the dough through grated potatoes.
