Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 8 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 1 14-ounce can sweetened condensed milk
- 1/2 cup pineapple puree
- 1 teaspoon vanilla extract
- 1/2 cup shredded coconut
- 1/2 cup chopped pecans
- 1 1/2 cups mini marshmallows
Directions
- Preheat oven to 350°F.
- In a medium bowl, combine graham cracker crumbs and butter. Press the mixture into the bottom and up the sides of a 9-inch pie plate.
- In a large bowl, beat cream cheese and sugar until light and fluffy. Beat in condensed milk, pineapple puree, and vanilla until smooth.
- Pour mixture into prepared crust. Bake for 25 minutes, or until edges are golden brown and center is set.
- Combine coconut, pecans, and marshmallows in a medium bowl. Sprinkle over the top of the pie.
- Bake an additional 10 minutes, or until marshmallows are golden brown.
- Allow to cool completely before serving.
