Ingredients
- 3 large eggs
- 1/2 cup sugar
- 1/2 cup honey
- 3/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 cup vegetable oil
- 2 tablespoons brandy (optional)
- 2 tablespoons grated lemon zest
- 1 1/2 cups fresh apricots, chopped
Directions
- Preheat the oven to 350°F (175°C). Grease a 9-inch (23 cm) springform pan with butter.
- In a medium bowl, whisk the eggs and sugar until light and creamy. Add the honey and whisk until blended.
- In a separate bowl, sift together the flour, baking powder and baking soda. Add to the egg mixture and mix until blended.
- Add the oil, brandy (if using) and lemon zest. Mix until blended.
- Fold the chopped apricots into the batter.
- Pour the batter into the prepared pan and spread evenly. Bake for 40-50 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then turn out onto a cooling rack and cool completely.
