Ingredients

  • 3 large eggs
  • 1/2 cup sugar
  • 1/2 cup honey
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup vegetable oil
  • 2 tablespoons brandy (optional)
  • 2 tablespoons grated lemon zest
  • 1 1/2 cups fresh apricots, chopped

Directions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch (23 cm) springform pan with butter.
  2. In a medium bowl, whisk the eggs and sugar until light and creamy. Add the honey and whisk until blended.
  3. In a separate bowl, sift together the flour, baking powder and baking soda. Add to the egg mixture and mix until blended.
  4. Add the oil, brandy (if using) and lemon zest. Mix until blended.
  5. Fold the chopped apricots into the batter.
  6. Pour the batter into the prepared pan and spread evenly. Bake for 40-50 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool in the pan for 10 minutes, then turn out onto a cooling rack and cool completely.
