Ingredients

  • 8 oz rice noodles
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced

  • 1 cup sliced goya (bitter gourd)
  • 2 eggs, beaten
  • 1/4 cup soy sauce
  • 2 tbsp tamarind paste
  • 2 tbsp brown sugar
  • 1/2 cup bean sprouts
  • 1/4 cup crushed peanuts
  • Lime wedges for serving

Directions

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the garlic and onion, and cook until softened.
  3. Add the bitter melon and goya to the skillet and cook until slightly tender.
