Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 lb. sausage, sliced into rounds
- 4 cups chicken broth
- 1 teaspoon Italian seasoning
- 2 cups small pasta (such as ditalini or small shells)
- 2 cups frozen mixed vegetables
- Salt and pepper, to taste
Directions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 3 minutes.
- Add the sausage and cook until lightly browned, about 5 minutes.
- Add the chicken broth, Italian seasoning, and pasta to the pot. Bring to a boil, then reduce heat to low and simmer for 10 minutes, or until the pasta is cooked through.
- Add the frozen vegetables and stir to combine. Cook for an additional 5 minutes, or until the vegetables are heated through.
- Season with salt and pepper, to taste.
- Serve hot.
