Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 lb. sausage, sliced into rounds
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 2 cups small pasta (such as ditalini or small shells)
  • 2 cups frozen mixed vegetables
  • Salt and pepper, to taste

Directions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 3 minutes.
  2. Add the sausage and cook until lightly browned, about 5 minutes.
  3. Add the chicken broth, Italian seasoning, and pasta to the pot. Bring to a boil, then reduce heat to low and simmer for 10 minutes, or until the pasta is cooked through.
  4. Add the frozen vegetables and stir to combine. Cook for an additional 5 minutes, or until the vegetables are heated through.
  5. Season with salt and pepper, to taste.
  6. Serve hot.
