Ingredients

  • 3 cups potatoes, cubed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 teaspoons caraway seed
  • 1 teaspoon paprika
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper, to taste

Directions

  1. In a large pot over medium heat, melt the butter. Add in the onion and garlic and cook until softened, about 5 minutes.
  2. Stir in the flour, caraway seed, and paprika, and cook for one minute.
  3. Add the chicken broth and potatoes and bring to a boil. Reduce the heat to low and simmer for 25 minutes or until the potatoes are tender.
  4. Stir in the cream and season with salt and pepper. Simmer for an additional 10 minutes.
  5. Serve warm and enjoy!
