Ingredients

  • 1 cup cooked and shredded chicken
  • 1/2 cup cooked bacon, chopped
  • 2 cups cooked Japanese short-grain rice
  • 1/4 cup sushi vinegar
  • 4 sheets of nori (seaweed paper)
  • 1/2 cup mayonnaise
  • 1 tablespoon sriracha sauce
  • 1/4 cup chopped green onion

Directions

  1. In a medium bowl, combine the cooked chicken and bacon.
  2. In a separate bowl, combine the sushi vinegar and cooked rice. Mix well.
  3. Lay one sheet of nori on a cutting board and spread 1/4 of the sushi rice in an even layer on the nori. Leave a 1/2 inch border of nori exposed.
  4. Flip the nori sheet so that the rice side is facing down. Spread 1/4 of the chicken and bacon mixture on the nori, making sure to leave a 1/2 inch border of nori exposed.
  5. Fold the sides of the nori sheet inwards to form a roll. Wet your fingers with water and press the edges of the nori together to seal the roll. Cut the roll into 8 pieces.
  6. Repeat steps 3-5 for the remaining 3 nori sheets.
  7. In a small bowl, combine the mayonnaise, sriracha sauce and green onion. Mix well.
  8. Serve the sushi rolls with the mayonnaise mixture on the side.
