In a medium bowl, combine the cooked chicken and bacon.
In a separate bowl, combine the sushi vinegar and cooked rice. Mix well.
Lay one sheet of nori on a cutting board and spread 1/4 of the sushi rice in an even layer on the nori. Leave a 1/2 inch border of nori exposed.
Flip the nori sheet so that the rice side is facing down. Spread 1/4 of the chicken and bacon mixture on the nori, making sure to leave a 1/2 inch border of nori exposed.
Fold the sides of the nori sheet inwards to form a roll. Wet your fingers with water and press the edges of the nori together to seal the roll. Cut the roll into 8 pieces.
Repeat steps 3-5 for the remaining 3 nori sheets.
In a small bowl, combine the mayonnaise, sriracha sauce and green onion. Mix well.
Serve the sushi rolls with the mayonnaise mixture on the side.
