Ingredients

  • 4 large potatoes, diced
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper, to taste

Directions

  1. Preheat a campfire to medium-high heat.
  2. In a large bowl, combine the potatoes, olive oil, garlic powder, onion powder, oregano, basil, and thyme. Toss to combine.
  3. Transfer the potatoes to a large piece of aluminum foil and sprinkle the cheese over the top. Fold the foil to form a packet.
  4. Carefully place the foil packet on the campfire and cook for 10 minutes. Carefully open the packet and stir the potatoes.
  5. Continue cooking for an additional 10 minutes, or until the potatoes are tender. Serve warm.
