Ingredients
- 4 large potatoes, diced
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 cup shredded cheddar cheese
- Salt and pepper, to taste
Directions
- Preheat a campfire to medium-high heat.
- In a large bowl, combine the potatoes, olive oil, garlic powder, onion powder, oregano, basil, and thyme. Toss to combine.
- Transfer the potatoes to a large piece of aluminum foil and sprinkle the cheese over the top. Fold the foil to form a packet.
- Carefully place the foil packet on the campfire and cook for 10 minutes. Carefully open the packet and stir the potatoes.
- Continue cooking for an additional 10 minutes, or until the potatoes are tender. Serve warm.
