Ingredients
- 1/2 cup butter, softened
- 1/2 cup white sugar
- 2 eggs
- 1/2 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 cup milk
- 1/2 teaspoon ground nutmeg
- 1 1/2 cups sliced fresh strawberries
- 1 tablespoon white sugar
Directions
- Preheat oven to 375 degrees F (190 degrees C). Grease 8 muffin cups.
- In a medium bowl, cream together the butter and 1/2 cup sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking powder and nutmeg; stir into the creamed mixture alternately with the milk.
- Spoon batter into prepared muffin cups. Divide the strawberries between the muffin cups, and sprinkle with the remaining sugar.
- Bake in preheated oven for 25 minutes, or until a toothpick inserted into the center of a cake comes out clean.
