Ingredients
- 1/2 cup butter, melted
- 1/2 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1 1/2 cups all-purpose flour
- 1/2 cup chopped nuts (optional)
- 1/2 cup raisins or other dried fruit (optional)
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease an 8x4 inch loaf pan.
- In a large bowl, cream together the butter and sugar. Beat in the eggs, one at a time, then stir in the vanilla. Combine the salt, baking powder, and flour; stir into the batter until well blended. Fold in the nuts and dried fruit, if desired.
- Spread evenly into the prepared pan.
- Bake for 55 to 60 minutes in the preheated oven, or until a toothpick inserted into the center of the loaf comes out clean.
- Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
