Tangy Tuna Black Bean Quesadillas

Ingredients

  • 2 cans of tuna, drained and flaked
  • 1 can black beans, drained and rinsed
  • 1 cup shredded cheese (Cheddar or Monterey Jack)
  • 1/4 cup green olives, chopped
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder
  • Salt and pepper, to taste
  • 4 large flour tortillas

Directions

  1. In a medium bowl, combine the tuna, beans, cheese, olives, onion, and cilantro. Mix well.
  2. In a small bowl, whisk together the mayonnaise, lime juice, cumin, chili powder, salt, and pepper. Pour over the mixture in the medium bowl and stir until combined.
  3. Lay out two tortillas on a work surface. Divide the tuna mixture evenly between them, spreading it out. Top with the remaining two tortillas.
  4. Heat a large non-stick skillet over medium-high heat. Place one of the quesadillas in the skillet and cook until golden brown and the cheese is melted, about 3-4 minutes per side.
  5. Repeat with the remaining quesadilla. Cut into wedges and serve immediately.
