Ingredients

  • 1 cup all-purpose flour
  • 1 cup blue cornmeal
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 1/2 cups buttermilk

Directions

  1. In a medium bowl, whisk together the flour, cornmeal, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the eggs, buttermilk, melted butter, and vanilla extract.
  3. Slowly add the wet ingredients to the dry ingredients, stirring until combined.
  4. Heat a large skillet over medium heat and grease with butter or oil.
  5. Using a 1/4 cup measure, pour the batter into the skillet.
  6. Cook for 2-3 minutes, until the edges start to turn golden brown.
  7. Flip the pancake and cook for an additional 2-3 minutes, until golden brown.
