Ingredients

  • 2 lbs. lamb, cubed
  • 1 white onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 cups beef broth
  • 1 cup diced tomatoes
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 lb. fresh okra, sliced

Directions

  1. In a large pot, heat the oil over medium-high heat. Add the lamb cubes and brown all over, about 5 minutes.
  2. Add the onion and garlic and cook for 3 minutes, stirring occasionally.
  3. Add the tomato paste, cumin, coriander, turmeric, cardamom, cinnamon, and nutmeg. Stir to combine and cook for 2 minutes.
  4. Add the beef broth, diced tomatoes, salt, and pepper. Stir to combine and bring to a boil.
  5. Reduce the heat to low and simmer for 45 minutes, stirring occasionally.
  6. Add the okra and simmer for another 30 minutes, stirring occasionally.
  7. Serve with steamed rice or crusty bread.
