Ingredients

  • 1 tablespoon vegetable oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 2 teaspoons turmeric powder
  • 1/2 teaspoon chili powder
  • 1 small onion, chopped
  • 1/4 cabbage, chopped
  • 2 cloves garlic, minced
  • 1 (14-ounce) can black beans, drained and rinsed
  • Salt and pepper to taste

Directions

  1. Heat the oil in a large skillet over medium heat.
  2. Add the cumin and mustard seeds and cook until they begin to sizzle, about 2 minutes.
  3. Add the turmeric, chili powder, and onion and cook until the onion is softened, about 5 minutes.
  4. Add the cabbage and garlic and cook until the cabbage is softened, about 8 minutes.
  5. Add the beans and cook until heated through, about 3 minutes.
  6. Season with salt and pepper to taste.
  7. Serve over cooked rice or naan.
