Ingredients
- 1¼ cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ cup (1 stick) unsalted butter, chilled and cut into small cubes
- 1 large egg
- 2 tablespoons cold water
- 1 cup dried cranberries
- 1 cup shelled pistachios
- 2 tablespoons honey
- 1 teaspoon ground cinnamon
Directions
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Add the butter and mix with a pastry blender or your fingers until the mixture resembles coarse crumbs.
- In a small bowl, beat the egg and water. Add to the flour mixture and stir just until the dough comes together.
- Turn the dough out onto a lightly floured work surface and knead just until it comes together. Divide the dough in half and shape each piece into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.
- In a medium bowl, combine the cranberries, pistachios, honey, and cinnamon. Set aside.
- Preheat oven to 375°F. Line two baking sheets with parchment paper.
- Working with one disk of dough at a time, roll out the dough on a lightly floured work surface into a 12-inch circle about 1/8-inch thick. Spread half of the cranberry-pistachio filling onto the dough, leaving a 1-inch border around the edge. Roll up the dough like a jelly roll. Cut the roll into 12 slices and place on the prepared baking sheets. Repeat with the remaining dough and filling.
- Bake for 25 minutes, or until golden brown. Transfer to a wire rack to cool.
