This scrumptious Strawberry Lemon Poke Cake is a perfect combination of sweet strawberries and tangy lemon flavors. The moist cake is infused with a strawberry gelatin mixture and topped with a zesty lemon cream cheese frosting. It's a refreshing dessert for any occasion!
Ingredients
- 1 box of white cake mix
- 1 cup of water
- 1/3 cup of vegetable oil
- 3 eggs
- 1 package of strawberry gelatin mix
- 1 cup of boiling water
- 1/2 cup of cold water
- 1 package of lemon instant pudding mix
- 1 cup of milk
- 1 container of whipped topping
- Zest of 1 lemon
Directions
- Preheat oven to 350°F and grease a 9x13 inch baking pan.
- Prepare the cake mix according to package instructions and bake in the prepared pan.
- Once the cake is done, poke holes all over the top using the end of a wooden spoon.
- In a bowl, mix the strawberry gelatin mix with boiling water until dissolved. Stir in cold water and pour over the cake, making sure the mixture seeps into the holes.
- Refrigerate the cake for 2 hours to set.
- In another bowl, whisk together the lemon pudding mix and milk until thickened. Spread over the cake.
- Top the cake with whipped topping and sprinkle lemon zest over it.
