This scrumptious Strawberry Lemon Poke Cake is a perfect combination of sweet strawberries and tangy lemon flavors. The moist cake is infused with a strawberry gelatin mixture and topped with a zesty lemon cream cheese frosting. It's a refreshing dessert for any occasion!

Ingredients

  • 1 box of white cake mix
  • 1 cup of water
  • 1/3 cup of vegetable oil
  • 3 eggs
  • 1 package of strawberry gelatin mix
  • 1 cup of boiling water
  • 1/2 cup of cold water
  • 1 package of lemon instant pudding mix
  • 1 cup of milk
  • 1 container of whipped topping
  • Zest of 1 lemon

Directions

  1. Preheat oven to 350°F and grease a 9x13 inch baking pan.
  2. Prepare the cake mix according to package instructions and bake in the prepared pan.
  3. Once the cake is done, poke holes all over the top using the end of a wooden spoon.
  4. In a bowl, mix the strawberry gelatin mix with boiling water until dissolved. Stir in cold water and pour over the cake, making sure the mixture seeps into the holes.
  5. Refrigerate the cake for 2 hours to set.
  6. In another bowl, whisk together the lemon pudding mix and milk until thickened. Spread over the cake.
  7. Top the cake with whipped topping and sprinkle lemon zest over it.
