This Portuguese Chourico Stew is a flavorful and comforting dish that combines smoky chourico sausage with tender vegetables and beans. The stew is simmered in a rich tomato broth seasoned with garlic, paprika, and bay leaves. Serve it with crusty bread for a complete and satisfying meal.
Ingredients
- 1 lb chourico sausage, sliced
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 2 bay leaves
- 1 tsp paprika
- 1 tsp dried thyme
- 1 can (15 oz) white beans, drained and rinsed
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Directions
- In a large pot or Dutch oven, heat some olive oil over medium heat.
- Add the chourico sausage and cook until browned. Remove the sausage from the pot and set aside.
- In the same pot, add the onion, garlic, carrots, celery, and bell pepper. Cook until the vegetables are softened.
- Add the diced tomatoes, chicken broth, bay leaves, paprika, and dried thyme to the pot. Stir well to combine.
- Bring the stew to a boil, then reduce the heat to low and let it simmer for 20 minutes.
- Add the cooked chourico sausage back to the pot along with the white beans. Season with salt and pepper to taste.
- Simmer the stew for an additional 10 minutes to allow the flavors to meld together.
- Remove the bay leaves and serve the stew hot, garnished with fresh parsley.
