Ingredients

  • 1 cup all-purpose flour
  • 1 1/2 cups milk
  • 2 large eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 slices ham, diced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced bell pepper
  • 1/4 cup diced onion
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons olive oil

Directions

  1. In a large mixing bowl, whisk together the flour, milk, eggs, salt, and black pepper until smooth.
  2. Heat a non-stick skillet over medium heat and add a tablespoon of olive oil.
  3. Pour 1/4 cup of the crepe batter into the skillet and swirl it around to evenly distribute the batter across the bottom of the skillet.
  4. Cook the crepe for about 2 minutes, or until the edges start to brown and the center is set.
  5. Flip the crepe and cook for another 1-2 minutes on the other side.
  6. Transfer the cooked crepe to a plate and repeat with the remaining batter, adding more olive oil to the skillet as needed.
