  • Ricotta cheese (1 cup)
  • Grated Parmesan cheese (1 cup)
  • Mozzarella cheese (1 cup, shredded)

Directions

  1. Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Cook the penne pasta according to the package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.
  4. Add the chopped kale and diced zucchini to the skillet. Cook for 5-7 minutes, or until the vegetables have softened.
  5. Season the vegetables with crushed red pepper flakes, dried oregano, salt, and black pepper. Stir well to combine.
  6. In a large mixing bowl, combine the cooked penne pasta, sautéed vegetables, ricotta cheese, grated Parmesan cheese, and half of the shredded mozzarella cheese. Mix until all the ingredients are well combined.

  8. Sprinkle the remaining shredded mozzarella cheese over the top of the pasta mixture.
  9. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
