Ingredients
- 2 cups all-purpose flour
- 1 1/4 cups granulated sugar
- 1/2 cup unsalted butter, softened
- 1/4 cup creamy peanut butter
- 1 cup milk
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 4 large eggs
- 1 batch of peanut butter frosting (see recipe below)
- 1/2 cup salted peanuts, chopped (for garnish)
Directions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, cream together the softened butter, peanut butter, and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined.
- Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.
- Bake for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
- Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.
- Meanwhile, prepare the peanut butter frosting.
- Once the cakes are completely cooled, place one cake layer on a serving platter. Spread a generous amount of peanut butter frosting evenly over the top.
- Place the second cake layer on top and frost the entire cake with the remaining peanut butter frosting.
- Garnish with chopped salted peanuts for added crunch and flavor.
- Slice and serve the delicious Peanut Butter Cake. Enjoy!
- Note: Store any leftovers in an airtight container at room temperature for up to 3 days.
