Directions

  1. In a large mixing bowl, combine the flour, salt, and sugar. Add the cold butter cubes and use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
  2. Add the ice water, 1 tablespoon at a time, and mix the dough until it starts to come together. Be careful not to overmix. Divide the dough in half, form each half into a disk, and wrap them in plastic wrap. Refrigerate for at least 1 hour.
  3. Preheat the oven to 425°F (220°C). On a lightly floured surface, roll out one disk of dough into a circle large enough to fit into a 9-inch (23 cm) pie dish. Gently transfer the dough to the pie dish and press it into the bottom and sides.
